Ingredients

1 med. zucchini
4 oz mushrooms
2 eggs, slightly beaten
3 C cold, cooked rice
½ lb leftover steak
1 C frozen peas
2 Tbsp. soy sauce
1 Tbsp grapeseed oil
2 garlic cloves, pressed
2-3 Tbsp sesame oil

Instructions
  1. Cut mushrooms and zucchini into uniform pieces.
  2. Heat large skillet over midium high heat. Add oil.
  3. Once oil is shimmering, add garlic and cook until nice and fragrant, about a minute.
  4. Add mushrooms and zucchini, cook for 3-5 min, or until nicely browned and softened, stirring frequently.
  5. Push vegetables to the side, and add beaten eggs. Scramble the egg until just set and mix with the vegetables.
  6. Stir in rice and cook 2-3 min, stirring frequently
  7. Add sliced steak and peas. Stir in the soy sauce and sesame oil. Mix and cook until everything is heated through. Serve immediately.
