Ingredients

3 Tbsp butter
8 oz mushrooms, sliced
1 C onions, chopped
2 Tbsp flour
1 C milk or half-and-half
Freshly ground black pepper to taste
Kosher salt to taste
2 C diced potatoes, cooked
2 C diced chicken, cooked
Optional: 1 C soft breadcrumbs
Optional: 2 Tbsp butter, melted
Optional: 1 C cheddar cheese, shredded (or Monterey or Jach cheese)

Instructions
  1. Preheat oven to 350°. Prepare 1½ quart baking dish.
  2. Heat butter in large, heavy skillet or sauté pan over med heat. Add mushrooms and onions, and cook until tender and lightly browned, about 8 min.
  3. Stir in flour and cook, stirring 1-2 min.
  4. Gradually add the milk, stirring and cooking until thickened. Add pepper and salt.
  5. In the baking dish, combine the cooked potatoes, chicken, and mushroom sauce mixture.
  6. If using the breadcrumb topping, toss the breadcrumbs with the melted butter until well coated.
  7. Top the casserole with the buttered breadcrumbs or sprinkle with shredded cheese.
  8. Bake for 25 to 30 minutes or until hot and bubbly. Enjoy.
