Chicken with Garlic-Roasted Sweet Potatoes

Ingredients
4 boneless skinless chicken breasts
¼ cup olive oil
¼ cup. Dijon or whole grain mustard
¼ cup raw honey (optional)
Juice of half a lemon
2 garlic cloves, minced
½ tbsp. paprika
¼ tsp. cayenne pepper
¼ tsp. red pepper flakes
Sea salt and freshly ground black pepper
A few dashes of hot sauce (optional)
Ingredients for the Garlic-Roasted Sweet Potatoes
2 cups sweet potatoes, peeled and cubed
2 garlic cloves, minced;
1 tbsp. olive oil
Sea salt and freshly ground black pepper
Instructions
- Whisk all ingredients for chicken marinade in a glass bowl.
- Add the chicken breasts to the bowl. Cover and marinate in the refrigerator for 2 to 12 hours.
- Preheat your oven to 425 F.
- In a bowl, combine all the ingredients for the sweet potatoes and toss until everything is well combined.
- Place the chicken breasts in a baking dish, and add the sweet potatoes all around them.
- Bake in the oven for 30 to 40 minutes, or until the chicken is no longer pink and the sweet potatoes are soft.
