Potato Pancakes

Ingredients
1 C dryed hash brown potatoes
1 C boiling water
2 Tbsp flour
1 egg
2 Tbsp chopped onion
Optional: Ham, bacon, vegetables, etc.
Instructions
- Measure dehydrated potatoes into bowl. Pour boiling water over them and let sit for at least 12 minutes. Of follow package directions if different. This yields about 2 cups of potatoes.
- Put flour and egg into small bowl. Whip with a fork until thoroughly mixed.
- Heat frying pan with small amount of oil.
- Add chopped onion to potatoes.
- This is where you can add additional ingredients such as breakfast meat, additional vegetables, etc. If adding optional ingredients, add more egg/flour mixture to bind the ingreditents together.
- Spoon the potato mixture into hot frying pan. This recipe makes 4 small to medium patties. Cook on medium-high heat until well browned.
- Serve imediately or keep warm in oven.
